TWD: Honey-Wheat Cookies


It's hard to believe but there is no chocolate in the TWD recipe this week.   Michelle of Flourchild decided on Honey-Wheat Cookies, page 81 of  Baking: From My Home To Yours by Dorie Greenspan. These cake like cookies were coated with wheat germ and  flavored with honey and lemon. The taste and texture of theses cookies were like muffin tops,  a little firm at the edge but soft and cakey in the center. They were good cookies, but not ones I would rush to make again.

Easy to make, they do require chilling time.  Even after several hours of chilling the dough was still soft and sticky.

You can see the wholesomeness int he cookies. I think I would love them....with maple syrup in place of the honey. Anyhow, I like!

The cookies look very healthy with those specks of germ. Great photo too.
I wanted to answer your question: mastic is a flavoring added to most desserts in Lebanese pastry especially ice-cream; it is also used in other countries of the eastern mediterranean like Turkey and Greece; actually, it is a small bag or jar, in it there are small clear pebbles and you crush them with sugar to obtain a distinct perfume. These come from the sap of a bush on Greece. I will explain it in a post later.

What? No chocolate? Still, nice photos of the cookies, Mimi. And they look good....sorry you weren't crazy about them. I'm not sure I'd want a wheat germ covered cookie either because I don't like wheat germ! But they LOOK good. ;)

I love the patterns on the tops of your cookies, they make the cookies look so elegant and beautiful. The last photo of the inside shot is also very wonderful. Need to make these again.
