I used toasted pecan in the cookies and a variety of jams, strawberry, apricot and berry in the centers.
You could easily fill the centers with nutella, ganache, or dulce de leche, but I loved the glistening shiny centers that the jam created. They looked like big jeweled buttons.
There are so many variations for this cookie, change your nuts, change your filling and you have a whole new taste. If you would like the recipe to make these outstanding cookies drop on over and visit Mike, or buy Dorie's book.

I'm really glad you visited since it gave me the opportunity to discover your blog, which is something I kinda forget to do with the TWD, having been there for such a long time now.

Hi Mimi!
"Ugly Dude Food" what a cool blog name. These are however NOT ugly dude food. They need a cup of tea and me!
Sorry about your carrots being stolen from sneaky little hands. I do admit, I laughed when I read that comment though. Hey at least your kids are eating vegetables.

These cookies are beautifully photographed and are a gem! I found that pecans yield an amazing flavor in a cookie, both sweet and nutty and the jam is such a nice contrast. Great.

Funny, I use pecans in my linzer cookies and prefer them over hazelnuts. Almost used them again this time - glad you did! They look so festive with the different jams - beautiful!
I love all the diffrent flavours - they look fabulous!
